Paella

The word paella means pan- the’ paella’ is not only the name of the meal. It’s all-encompassing. Paella is a shallow pan that allows the bomba rice to cook slowly and absorb all of the many flavors; it is also how the socarrat develops. Socarrat translates in Spanish to describe the delicious crust that forms at the bottom of the paella. Olive oil, garlic, onion, red bell pepper, calamari, fish stock, saffron, mussels, shrimp, and lots of love.
