Mallorcan Shellfish Paella

An authentic paella is all about the ingredients and the method of cooking. The word paella means pan- the’ paella’ is not only the name of the meal. It’s all-encompassing. Paella is a shallow pan that allows the bomba rice to cook slowly and absorb all of the many flavors; it is also how the socarrat develops. Socarrat translates in Spanish to describe the delicious crust that forms at the bottom of the paella.
