Spanish Wine and Lamb Shank
The shank is stacked high over a swathe of butterbean puree-it’s not a fussy dish, the ingredients are few, but the components– the contrasting flavors, are enhanced and melded together by time and fire. Lamb, chorizo, celery, garlic onion, all steeped in red wine, with tender butterbeans over a butterbean puree.
